Lemon Sugar Cookie Sandwiches with Lemon Buttercream Frosting

These Lemon Sugar Cookie Sandwiches are filled with Lemon Buttercream Frosting. These soft Lemon Sandwich Cookies are soft and chewy, and the lemon frosting is smooth and creamy.

Ingredients
Sugar Cookies
  • 1 1/4 cup granulated sugar
  • 2 tsp lemon zest
  • 1 cup unsalted butter, softened to room temperature
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 1/2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Topping:
  • 1/4 cup granulated sugar, for rolling
Lemon Buttercream Frosting
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 Tbsp lemon zest
  • 1 1/2 cups powdered sugar
  • 1 -2 Tbsp heavy whipping cream
  • 2 tsp lemon juice
  • pinch of salt
Instructions
Sugar Cookies:
  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a bowl, rub sugar and zest together until combined and fragrant. Set aside.
  3. Cream the unsalted butter with a standing mixer (or hand mixer) until it is light and fluffy.
  4. Add in the lemon sugar, and continue to cream the mixture until light and fluffy.
  5. Add in the egg, and mix until combined.
  6. Add in the vanilla etract and almond extract.
  7. Finally, add in the flour, baking soda, baking powder, and salt. Mix until well combined.
  8. Roll the dough into 1” balls and roll in granulated sugar.
  9. Bake for 10-11 minutes, or until cookies are puffed in the centers and have set.
  10. Allow to cool before frosting.
Lemon Frosting:
  1. Cream butter in the bowl of a standing mixer, or with a hand mixer, until light and fluffy.
  2. Add in the lemon zest and powdered sugar. Mix until combined.
  3. Add in the lemon juice and 1 Tbsp of heavy whipping cream. If the frosting feels too thick, add in the remaining Tbsp of heavy whipping cream.
  4. Finally, add in a pinch of salt to offset the sweetness of the frosting.
Assembly:
  1. Spread frosting on the inside of half of the sugar cookies. Top each with remaining sugar cookies and press down lightly. Serve.
