Ingredients
  • 1/2 cup sugar
  • 1 Tbsp orange zest
  • 2 whole Eggland’s Best Eggs
  • 2 Tbsp butter, melted
  • 2 Tbsp orange juice
  • 1/2 tsp vanilla extract
  • pinch of salt, around 1/8 - 1/4 tsp
  • 4 1/2 cups sweetened, shredded coconut
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Mix sugar and orange zest together. Add in Eggland’s Best eggs and melted butter. Mix until well combined.
  3. Add in orange juice, vanilla extract, and salt. Mix.
  4. Add in shredded, sweetened coconut, and mix until all the coconut is combined.
  5. With a small cookie scoop or two spoons, scoop the macaroons into 1" balls. Place on the baking sheet, about 1-2" apart.
  6. Bake for about 20-22 minutes, or until macaroons are lightly golden brown on top (and on the bottom).
