Ingredients
Bundt Cake
  • 3 1/2 cups all purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 eggs, lightly beaten
  • 1 cup canola oil
  • 6 oz vanilla yogurt, or sour cream
  • 1 1/2 tsp vanilla extract
  • 2 tsp orange zest
  • 1 Tbsp orange juice, freshly squeezed
  • 1 1/2 cups shredded apple
  • 1 1/2 cups chopped apple
Cinnamon Vanilla Glaze
  • 1 1/2 cups powdered sugar
  • 1/2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 3-4 Tbsp heavy whipping cream or milk
Instructions
Bundt Cake
  1. Preheat oven to 325 degrees. Grease a bundt pan with baking spray. Set aside.
  2. In a large bowl, mix flour, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, allspice, salt, and baking soda together.
  3. Make a well in the center of the dry ingredients; add eggs, and stir until combined (batter will be dry).
  4. Add in canola oil, and stir until combined.
  5. Add in yogurt, vanilla extract, orange zest, and orange juice; stir until combined.
  6. Fold in chopped and shredded apples.
  7. Spread the batter evenly in the bundt pan.
  8. Bake for 55-60 minutes, or until a cake tester comes out clean (mine baked for exactly 59 minutes).
  9. Allow the cake to cool for 10 minutes, then remove from the bundt pan and allow to finish cooling.
Vanilla Glaze
  1. Whisk powdered sugar, cinnamon, vanilla extract, and 3 Tbsp heavy cream (or milk) together. If the glaze is too thick, add in the remaining 1 Tbsp of cream (or milk).
  2. Pour the glaze evenly over the cake.
  3. Enjoy! Refrigerate leftovers.
