These soft and chewy oatmeal raisin cookies are a classic. Full of cinnamon spice and packed with raisins, these cookies will remind you of home.

Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 Tbsp pure maple syrup
  • 2 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp all spice
  • 1/4 tsp salt
  • 1 1/2 cups rolled old-fashioned oats
  • 1 cup raisins, golden or regular or both
  • 1 oz white chocolate, melted (optional)
Instructions
  1. Cream butter until light and fluffy, about 1 minute.
  2. Add in brown sugar and white sugar. Beat until light and fluffy, about 1 minute.
  3. Add in the egg. Beat until combined.. Add in maple syrup and vanilla extract. Beat until combined.
  4. In a separate bowl, sift together flour, baking soda, cinnamon, all spice, and salt. Add in oats.
  5. Slowly mix dry ingredients into wet ingredients. Stir until combined.
  6. Add in raisins. Stir.
  7. Chill for at least 30 minutes.
  8. Once dough is chilled, preheat oven to 350. Grease two cookie sheets.
  9. Form dough into 1-1/2 Tbsp balls, spacing them about 2 inches apart on the cookie sheet.
  10. Bake for 10-12 minutes.
  11. Once cooled, drizzle melted white chocolate (optional)
