Coconut Dark Chocolate Almond Clusters
Servings: 25 clusters
In a medium pan over low-med heat, toast coconut for 4-5 minutes, stirring occasionally. Remove from the heat once the coconut begins turning brown. Set aside.
Melt chocolate in the microwave (30 second increments on 50% power, stirring after each hit) or over a double broiler.
Mix almonds and chocolate together until almonds are well coated.
Line a baking sheet with parchment paper, and spoon out small clusters of chocolate almonds (you can make these as big or small as you would like--mine were about the size of 1 1/2 Tablespoons).
Sprinkle each cluster with toasted coconut.
Allow chocolate to set completely before eating, either on the counter or in the fridge.
Store leftovers in an airtight container.
