{Fluffy} Honey Banana Pancakes

Servings: 10 -12 pancakes
Ingredients
Pancakes
  • 2 cups all-purpose flour
  • 1 Tbsp corn starch
  • 2 Tbsp light brown sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 1/4 cups milk I used 2%
  • 1 egg beaten
  • 2 Tbsp vegetable oil
  • 2 Tbsp honey
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract optional
  • 1 cup mashed bananas (about 2 medium-large bananas)
Toppings
  • Sliced Bananas
  • Syrup
  • Butter
Instructions
  1. Preheat griddle or pan over medium-low heat, greasing with cooking spray or butter.
  2. In a bowl, mix together flour, corn starch, brown sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix together milk, egg, vegetable oil, honey, vanilla extract, almond extract, and mashed bananas.
  4. Mix the wet ingredients with the dry ingredients, and mix until just combined. The batter will be lumpy from the mashed bananas.
  5. Pour about 1/4 cup of batter onto the griddle, and cook over med-low heat. Once bubbles begin to form and burst in the batter, flip the pancake over and cook for about 1-2 more minutes, or until the underside is golden brown.
  6. Repeat for all of the batter.
  7. Enjoy with bananas, butter, and syrup!
