Roasted Tomato and Ricotta Bruschetta

This easy appetizer recipe is perfect for any party or get together! With roasted tomatoes and ricotta cheese, this bruschetta recipe is a fun twist on a classic! When paired with Red Baron pizza, you've got a real party on your hands!
Servings: 18 -20 Bruschetta
Ingredients
Roasted Tomatoes
  • 2 cups cherry tomatoes red, yellow, and/or orange
  • 1 Tbsp olive oil
  • 1/2 tsp salt
Bread
  • 1 loaf French bread large enough to get about 18-20 slices when cut
  • olive oil for sprinkling
  • pepper for sprinkling
Toppings
  • 1 cup Ricotta cheese
  • 2 tsp basil dried
Instructions
  1. Preheat the oven to 400 degrees.
  2. Pour tomatoes in a foil-lined baking dish, and sprinkle with salt and olive oil. Roast for 35 minutes, or until tomatoes have burst and begun to shrink.
  3. Place all slices of French bread on a large baking sheet. Drizzle each slice with a little bit of olive oil (about 1/4 tsp on each) and sprinkle each with a little bit of pepper (this is for flavoring and a little goes a long way). Allow to toast in the 400 degree oven for 3-4 minutes, or until the bread is just turning golden brown. Allow to cool for a couple of minutes.
  4. Spread a bit of Ricotta cheese on each slice of bread. Top with a couple roasted tomatoes and sprinkle with dried basil.
  5. Serve immediately.
