This easy appetizer recipe is perfect for any party or get together! With roasted tomatoes and ricotta cheese, this bruschetta recipe is a fun twist on a classic! When paired with Red Baron pizza, you've got a real party on your hands!

Roasted Tomatoes

loaf French bread
large enough to get about 18-20 slices when cut

for sprinkling

for sprinkling

Ricotta cheese

Preheat the oven to 400 degrees.

Pour tomatoes in a foil-lined baking dish, and sprinkle with salt and olive oil. Roast for 35 minutes, or until tomatoes have burst and begun to shrink.

Place all slices of French bread on a large baking sheet. Drizzle each slice with a little bit of olive oil (about 1/4 tsp on each) and sprinkle each with a little bit of pepper (this is for flavoring and a little goes a long way). Allow to toast in the 400 degree oven for 3-4 minutes, or until the bread is just turning golden brown. Allow to cool for a couple of minutes.

Spread a bit of Ricotta cheese on each slice of bread. Top with a couple roasted tomatoes and sprinkle with dried basil.
