Ingredients
Yellow Cake
  • 1 box yellow cake mix (plus all ingredients on the back of the box)
  • 1 Tbsp brewed coffee, cool
  • 1 1/2 tsp espresso powder
Filling
  • 1 14 oz can sweetened condensed milk
  • 3 Tbsp brewed coffee, cool*
  • 1 tsp espresso powder
  • 1 Tbsp cocoa powder
Whipped Cream Frosting
  • 1 1/2 cups heavy whipping cream
  • 6 oz whipped cream cheese (it does need to be whipped)
  • 1/2 cup powdered sugar
  • 1 Tbsp brewed coffee, cool
  • 1/2 tsp espresso powder
Topping
  • dusted cocoa powder
  • strawberries
Instructions
Cake
  1. Preheat oven according to the temperature listed on the back of your cake mix (mine was 350 degrees) and grease a 9x13 pan. Set aside.
  2. Mix cake with all ingredients listed on the back of your box and add in the 1 Tbsp of coffee and 1 1/2 teaspoons espresso powder.
  3. Once all ingredients are combined, pour the batter into your prepared pan and bake according to the time listed on the back of your cake mix.
  4. Once the cake is baked, allow it to cool about 1-2 minutes, then, using the back of a wooden spoon (or something similar in size) poke holes across the surface of the cake. Poke only about halfway down into the cake (you don’t want to poke all the way to the bottom).
Filling
  1. Whisk sweetened condensed milk, brewed coffee, espresso powder, and cocoa powder. Pour filling over the cake, making sure to pour over the holes.
  2. Place cake in the fridge to chill.
Whipped Cream Frosting
  1. While the cake is chilling, whisk heavy whipping cream (with a hand mixer or standing mixer) until soft peaks form.
  2. Add in powdered sugar, brewed coffee and espresso powder and whisk until stiff peaks form.
  3. Add in whipped cream cheese, 3oz at a time, whisking until just combined.
  4. Spread frosting over the cake and continue to chill for at least 2 hours before serving.
  5. Right before serving, dust with cocoa powder and top with strawberries, if desired.
  6. Enjoy!
  7. Store leftovers in the fridge.
Recipe Notes

*You can substitute coffee liqueur for the brewed coffee, if desired.
