Oreo Cookies and Cream Poke Cake

This easy Oreo Cookies and Cream Poke Cake with a Whipped Cream Cheese Frosting begins with a yellow cake mix, is filled with an Oreo chocolate pudding and topped with a cookies and cream frosting.

Ingredients
Cake
  • 1 box yellow cake mix (plus all ingredients on the back of the box)
  • 1 cup Oreos, chopped into small pieces
Filling
  • 1 box (3.4oinstant chocolate pudding
  • 1 1/2 cups milk
Whipped Cream Frosting
  • 1 1/2 cups heavy whipping cream
  • 6 oz whipped cream cheese (it must be whipped)
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar
Topping
  • 1 cup Oreos, roughly chopped
Instructions
Cake
  1. Preheat oven to 350 degrees and grease a 9x13 baking pan.
  2. Mix cake with all ingredients on the back of the box. Once combined, add in Oreos and mix until combined.
  3. Pour batter into prepared cake pan and bake according to the directions on the back of the box.
  4. Once the cake is baked, allow the cake to cool for a few minutes. Then, using the back of a wooden spoon (or something that is similar in sizpoke holes across the surface of the cake. Only poke about halfway down into the cake (you do not want to poke all the way to the bottom).
Filling
  1. Whisk 1 1/2 cups milk and instant chocolate pudding mix together until the pudding has thickened. Pour the pudding over the top of the cake, spreading the pudding evenly over the cake (as you spread the pudding, it will start to fall into the poked holes).
  2. Place the cake in the fridge to chill (at least 2 hours or so).
Whipped Cream Frosting
  1. Once the cake has chilled, whisk the heavy whipping cream (using a hand mixer or standing mixeuntil soft peaks begin to form.
  2. Add in powdered sugar and vanilla extract and whisk until just combined.
  3. Next, add in whipped cream cheese, 3oz at a time, whisking until just combined.
  4. Spread the frosting over the top of the cake.
  5. Sprinkle with crushed Oreos.
  6. Serve immediately or keep in the fridge until ready to serve.
