Easy Strawberry Cobbler with Lemon Biscuits

This easy Strawberry Cobbler with Lemon Biscuits recipe is a perfect summer dessert! Fresh strawberries are topped with homemade lemon biscuits (an easy drop biscuit recipe) and baked until perfection. With fresh whipped cream or ice cream, this strawberry cobbler is a summer staple! Ingredients
Strawberry Filling
  • 5 cups fresh strawberries, hulled and quartered
  • 4 tsp all purpose flour
  • 1/4 cup granulated sugar
  • squeeze of lemon juice
Lemon Biscuit Topping
  • 1 1/2 cups all purpose flour
  • 1/3 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp lemon zest
  • 6 Tbsp butter, melted
  • 1/2 cup heavy whipping cream
  • 1/4 cup fresh lemon juice
  • raw sugar, for sprinkling (optional)
Topping
  • Whipped Cream (favorite recipe linked below)
  • Ice Cream
  • Fresh Strawberries
Instructions
  1. Preheat oven to 350 degrees and grease a deep dish 9” or 10” pie plate (alternately, you can use a 9x9 or 9x13 baking dish as well).
  2. Mix strawberries, flour, lemon juice and sugar together. Spread the strawberries evenly in the bottom of your pie plate.

  3. In a bowl, mix flour, sugar, baking powder, salt and lemon zest together.
  4. Make a well in the center of the ingredients and pour in melted butter, heavy cream and lemon juice. Mix until all ingredients are combined.
  5. Spoon dollops of biscuit dough all over the top of the strawberries. Sprinkle with raw sugar, if desired.
  6. Bake for 40-45 minutes, or until biscuits are golden brown on top and the filling is bubbling.
  7. Allow to cool for a few minutes before serving.
  8. Top with ice cream or whipped cream, if desired.
  9. Store leftovers in the fridge.
