The crockpot does all the work when it comes to these easy Salsa Verde Honey Lime Chicken Tacos!  Plus, these slow cooker chicken tacos pack a punch in the flavor department! Don't worry, guys, I've got dinner covered.

Ingredients
Chicken
  • 4-5 large chicken breasts,fresh
  • 1/3 cup honey
  • 1/4 cup lime juice
  • 2 cups salsa verde, jarred or homemade
  • 1/2 cup sour cream
  • 2 tsp taco seasoning, whatever is your favorite
Tacos
  • Corn or flour tortillas, warmed
  • Shredded cheese, any kind is fine--if you like spicy, I'd suggest pepper jack cheese with these tacos!
  • Sliced avocado
  • Diced tomatoes
  • Grilled Bell Peppers*
Instructions
  1. Place chicken in the crockpot, and cover with honey, lime juice, salsa verde, sour cream, and taco seasoning. With a pair of tongs, flip the chicken over so that both sides are coated. Cover, and cook on low for 6-8 hours, or on high for 3-4 hours.
  2. Once the chicken is cooked through, it will shread easily with two forks. Shred it in the crockpot; then stir it around so it can absorb some of the sauce. Keep it on the warm setting until ready to use.
  3. When ready to serve, use a slotted spoon to serve chicken onto tortillas. Top with avocado, tomatoes, bell peppers, cheese, and anything else you want!

Recipe Notes

*To grill bell peppers: Cut bell peppers into thin strips, then cook over medium heat in a skillet with just a touch of olive oil, stirring every so often. When the peppers begin to soften and turn golden brown, take them off the heat (about 4-5 minutes cooking time).
