It's a chocolate peanut butter dream! | www.alattefood.comThis weekend, my family welcomed a brand new addition: Baby Chloe arrived in the wee hours of Monday morning after she deliberated for hours (my sister is a rockstar) whether or not she wanted to be born on Sunday or Monday.

If there was any doubt that she was actually a baby girl (ultrasounds can be tricky, right?), her inability to make up her mind pretty much gave her away. She pulled a Kelly Clarkson and Little Miss Independent decided that Monday was the day for her grand entrance.

It’s fine. She’s adorable.

And totally forgiven that my National Ice Cream Day post is hitting the blog a little late. But really, shouldn’t it be National Ice Cream Week? Let’s make it a thing.

I have a real thing for peanut butter ice cream. And a real thing for PB & Co. I visited there in NYC, and just about died over the peanut butter combinations. A whole place devoted to peanut butter pairings?

Count me in! Twice.

And their peanut butter? Pretty much amazing.

The two stars in this ice cream: Smooth Operator and Dark Chocolate Dreams.

The peanut butter ice cream portion is a mix of peanut butter, brown sugar, half & half, heavy cream, and vanilla extract. Once mixed together, it is poured into an ice cream maker, and churned to perfection.

The chocolate peanut butter ribbon is a blend of chocolate peanut butter, milk chocolate chips, and vanilla extract, and butter.

When layered together and finished off with peanut butter chips and chocolate chips, it’s out of control good.

It’s pretty much the best thing ever.

Ingredients
Peanut Butter Ice Cream
  • 1 cup heavy cream
  • 1 cup half & half
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 3/4 cup creamy peanut butter (like PB & Co's Smooth Operator)
  • 1/4 cup peanut butter chips
  • 1/4 cup milk chocolate chips
Chocolate PB Swirl
  • 1/4 cup chocolate peanut butter (like PB & Co's Dark Chocolate Dreams)
  • 1/4 cup milk chocolate chips
  • 1 tsp vanilla extract
  • 1 Tbsp butter
Instructions
  1. In a large bowl, whisk together heavy cream, half & half, brown sugar, and vanilla extract. Melt the peanut butter in 30-second increments in the microwave, until melty. Whisk the melted peanut butter into the liquid mixture. Add in peanut butter chips and milk chocolate chips, and stir.
  2. Pour into your ice cream maker, and churn for about 20 minutes, or until thick and creamy.
  3. While the ice cream is churning, mix the chocolate peanut butter, milk chocolate chips, butter, and vanilla in a microwave safe bowl. Melt in 30-second increments, until the mixture is smooth, stirring after each hit in the microwave (it only takes about 60-90 seconds, depending upon your microwave). Set aside.
  4. Once your ice cream is ready, pour 1/3 of the ice cream mixture in a freezer-safe container. Spread half of the chocolate peanut butter swirl over the ice cream. Layer 1/3 of the ice cream on top. Spread the remaining chocolate peanut butter swirl over the ice cream. Layer the final 1/3 of ice cream over the top (when scooped, the ice cream will have a nice chocolate swirl throughout).
  5. If you like soft-serve ice cream, eat immediately. If you prefer a firmer cream, allow to freeze for at least 2-3 hours (when frozen, allow ice cream to sit out at room temperature for about 10 minutes to soften).
  6. Enjoy!

    You had me at peanut butter! Love this ice cream, Michelle! It looks absolutely perfect for this time of year. And I had those little blue plates in my hand to buy at Target yesterday, but decided at the last minute not to. Love them in your pics! 🙂
