Cinnamon Roll Biscuits

These gooey cinnamon roll biscuits begin with canned biscuit dough. It’s layers of flaky biscuits covered in cinnamon sugar and then drizzled with cinnamon roll filling. These easy cinnamon rolls are covered with a vanilla icing, making these these buttery biscuits taste every bit like a classic cinnamon roll.

Ingredients

Biscuits:

  • 2 cans of biscuit dough (8-count and preferably ones with flaky layers)*
  • 1/2 cup + 2 Tbsp unsalted butter, melted
  • 1 1/2 Tbsp ground cinnamon
  • 1 1/4 cups granulated sugar

Cinnamon Roll Filling:

  • 1/3 cup unsalted butter, melted
  • 2/3 cup brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 Tbsp heavy whipping cream

Vanilla Icing:

  • 1 cup powdered sugar
  • 2 Tbsp heavy whipping cream
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract

Instructions

  • Preheat the oven to 375 degrees and pour 2 Tbsp of melted butter into the bottom of a 9x13 baking dish.

Biscuits:

  • Open the 2 cans of biscuits and take 12 of the 16 rolls and split them in half lengthwise (due to the layers, they should just pull apart in half). Take the remaining 4 rolls and split them into 3 layers. You will have 36 pieces. Set aside.
  • Whisk together cinnamon and sugar and place in a bowl deep enough to dip each biscuit layer. Pour melted butter into a similar bowl.
  • Take 12 of the biscuit halves and dip in melted butter, then coat in cinnamon sugar on both sides, and place in an even layer in the buttered baking dish.
  • Take the 12 thinner layers (the ones cut in three layers) and dip in melted butter and cinnamon sugar, and then place on top of the biscuits in the baking dish (this is the middle layer).
  • Finally, repeat the steps with the remaining 12 halves.

Cinnamon Roll Filling:

  • Whisk melted butter, brown sugar, cinnamon, and vanilla together. Pour on top of all of the rolls. Use a spoon to spread out.
  • Finally, drizzle the heavy whipping cream on top of the rolls.
  • Bake at 375 for 25-30 minutes. Once the tops of the biscuits are lightly golden brown and the cinnamon roll filling is bubbling up, they are done.

Vanilla Icing:

  • While the cinnamon rolls cool, make the icing by whisking powdered sugar, heavy cream, vanilla extract, and almond extract together. Drizzle on top of the cinnamon rolls and let it set a few minutes before cutting and serving.

Notes

*If you can't find flaky layer canned biscuits, you can use homestyle biscuits or something similar. The flaky layers make it easier to split apart when doing the assembly, but you can do it with regular biscuit dough.
