Ingredients

  • 3 cups whole almonds
  • 12 oz dark chocolate
  • 1 cup coconut

Instructions

  • In a medium pan over low-med heat, toast coconut for 4-5 minutes, stirring occasionally. Remove from the heat once the coconut begins turning brown. Set aside.
  • Melt chocolate in the microwave (30 second increments on 50% power, stirring after each hit) or over a double broiler.
  • Mix almonds and chocolate together until almonds are well coated.
  • Line a baking sheet with parchment paper, and spoon out small clusters of chocolate almonds (you can make these as big or small as you would like--mine were about the size of 1 1/2 Tablespoons).
  • Sprinkle each cluster with toasted coconut.
  • Allow chocolate to set completely before eating, either on the counter or in the fridge.
  • Enjoy!
  • Store leftovers in an airtight container.
