{Crockpot} Salsa Verde Honey Lime Chicken Tacos

The crockpot does all the work when it comes to these easy Salsa Verde Honey Lime Chicken Tacos!  Plus, these slow cooker chicken tacos pack a punch in the flavor department! Don't worry, guys, I've got dinner covered.

Ingredients

Chicken

  • 4-5 large chicken breasts,fresh
  • 1/3 cup honey
  • 1/4 cup lime juice
  • 2 cups salsa verde, jarred or homemade
  • 1/2 cup sour cream
  • 2 tsp taco seasoning, whatever is your favorite

Tacos

  • Corn or flour tortillas, warmed
  • Shredded cheese, any kind is fine--if you like spicy, I'd suggest pepper jack cheese with these tacos!
  • Sliced avocado
  • Diced tomatoes
  • Grilled Bell Peppers*

Instructions

  • Place chicken in the crockpot, and cover with honey, lime juice, salsa verde, sour cream, and taco seasoning. With a pair of tongs, flip the chicken over so that both sides are coated. Cover, and cook on low for 6-8 hours, or on high for 3-4 hours.
  • Once the chicken is cooked through, it will shread easily with two forks. Shred it in the crockpot; then stir it around so it can absorb some of the sauce. Keep it on the warm setting until ready to use.
  • When ready to serve, use a slotted spoon to serve chicken onto tortillas. Top with avocado, tomatoes, bell peppers, cheese, and anything else you want!
  • Enjoy!

Notes

*To grill bell peppers: Cut bell peppers into thin strips, then cook over medium heat in a skillet with just a touch of olive oil, stirring every so often. When the peppers begin to soften and turn golden brown, take them off the heat (about 4-5 minutes cooking time).
