These Fruity Pebble Baked Vanilla Donuts (aka, cereal milk donuts) are made with sweet cereal milk, baked in the oven, and dunked in a cereal milk glaze. When topped with Fruity Pebbles, these yummy baked vanilla donuts make such a festive dessert or breakfast treat! Plus, these baked rainbow donuts are the perfect St. Patrick’s Day breakfast (or St. Patrick’s Day dessert)!

Ingredients

Cereal Milk

  • 1 cup milk
  • 1/2 cup Fruity Pebbles

Fruity Pebble Baked Vanilla Donuts

  • 1 1/4 cups all purpose flour
  • 3/4 cups sugar
  • 1 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 Tbsp vegetable or canola oil

Cereal Milk Vanilla Glaze

  • 1 1/4 cup powdered sugar
  • 2-3 Tbsp cereal milk
  • 1/2 tsp vanilla extract

Topping

  • Fruity Pebbles

Instructions

  • Preheat oven to 400 degrees and grease a donut pan well with baking spray.

Cereal Milk

  • Combine milk and Fruity Pebbles cereal in bowl and let stand for 15-20 minutes.
  • Strain cereal from milk. Measure out 1/2 cup for the donut batter, reserving the rest for the glaze.

Donuts

  • Mix flour, sugar, baking powder, nutmeg, and salt together.
  • Add in the egg, 1/2 cup cereal milk, vanilla extract, and oil. Mix until just combined.
  • Spoon or pipe the batter into each donut cavity, filling about 3/4 of the way full (you will have enough batter for about 8 donuts).
  • Bake for Bake for 10-12 minutes, or until the donuts are lightly golden and 'spring' back when touched.
  • Allow to cool for a few minutes, then remove the donuts from the pan and allow them to continue cooling on a wire rack (about 10 minutes).

Cereal Milk Vanilla Glaze

  • Whisk powdered sugar and 2 Tbsp of cereal milk (using the reserved cereal milk) until combined. Whisk in vanilla extract. If the glaze is still too thick, add in another Tbsp of cereal milk.
  • Sprinkle donuts with Fruity Pebbles before the glaze hardens, and allow the glaze to set before eating (about 5 minutes).
