Ingredients
3cupsapples, chopped, about 3-4 medium apples (I used Honey Crisp apples)
1cupcelery, chopped
1/2cuppecans, chopped (walnuts or almonds can be substituted)
1/4cupdried cherries or raisins
1/4cupvanilla Greek yogurt (I prefer my salad dressed lightly, but you can add more if you prefer it with more)
zest of a medium lemon
2tspfresh lemon juice
1tspsugar
1tsphoney
1/2tspcinnamon
1/4tspnutmeg
Instructions
In a large bowl toss apples, celery, pecans, and cherries together. Set aside.
In a small bowl, mix yogurt with lemon zest, lemon juice, sugar, honey, cinnamon, and nutmeg.
Pour dressing over the fruit mixture, and stir until coated.
