Servings: 18 -20 Bruschetta

Ingredients

Roasted Tomatoes

  • 2 cups cherry tomatoes red, yellow, and/or orange
  • 1 Tbsp olive oil
  • 1/2 tsp salt

Bread

  • 1 loaf French bread large enough to get about 18-20 slices when cut
  • olive oil for sprinkling
  • pepper for sprinkling

Toppings

  • 1 cup Ricotta cheese
  • 2 tsp basil dried

Instructions

  • Preheat the oven to 400 degrees.
  • Pour tomatoes in a foil-lined baking dish, and sprinkle with salt and olive oil. Roast for 35 minutes, or until tomatoes have burst and begun to shrink.
  • Place all slices of French bread on a large baking sheet. Drizzle each slice with a little bit of olive oil (about 1/4 tsp on each) and sprinkle each with a little bit of pepper (this is for flavoring and a little goes a long way). Allow to toast in the 400 degree oven for 3-4 minutes, or until the bread is just turning golden brown. Allow to cool for a couple of minutes.
  • Spread a bit of Ricotta cheese on each slice of bread. Top with a couple roasted tomatoes and sprinkle with dried basil.
  • Serve immediately.
  • Enjoy!
