Mini S'mores Bites: All the flavors of the classic campfire dessert are combined into one perfect bite! Summer has officially arrived, and what better way to kick off the season than with these adorable mini s’more cups?! They’re the perfect s’more anytime you want, and they are bite sized–so, obviously it’s perfectly acceptable to eat three.

One of my favorite summer pastimes is to roast marshmallows over a bonfire at the beach. There’s something about the calming waves of the ocean, the stillness of the night, and the chill of the ocean air juxtaposed by the heat of the fire that is incredibly amazing. Add in a s’more or two (or three), some great conversation, and you have the perfect, quintessential summer evening.

 

Mini S'mores Bites: All the flavors of the classic campfire dessert are combined into one perfect bite! These cups are easy to throw together and entirely customizable. For these bites, I used grahams, Oreos, and Golden Oreos (separately) for the crust and a variety of chocolate for the centers. And, have you seen those awesome flat marshmallows? They were the perfect marshmallow to sit atop this recipe.

Plus, these babies were as good cold as they were warm. In essence, these were perfect. I use the past tense because there were no leftovers.

You start with whatever ingredient you want for your crust–apart from the three I used, you could use chocolate grahams, peanut butter sandwich cookies, taffy cookies, chocolate chip cookies–let your imagination run wild!

After selecting your crust of choice, mix with a little melted butter. Form the crust into a mini muffin tin, and bake for about five minutes. Use whatever chocolate square you want–plain milk, dark, milk with peanuts, toffee, or if you want to get really crazy, sea salt and caramel. Pop the chocolate into the crust cup (Dove or Hershey Nuggets fit perfectly, but feel free to use chocolate chips or to break up candy bars–do what feels right), melt for a couple of minutes in the oven, and use a spoon to swirl the chocolate. I used the flat marshmallows, which fit perfectly. I cut them in half and used a half per s’more bite. I broiled them until they were golden brown (30 seconds or so) and viola!

A cinch.

Ingredients
  • 1 cup 12 Oreos (or whatever crust you've picked)
  • 3 Tbsp butter, melted
  • 12 chocolate mini chocolate bars
  • 6 flat marshmallows, cut in half
Instructions
  1. In a food processor or by hand, crush the oreos until they are finely ground. Add in butter and mix together. Form crust into twelve mini muffin tins.
  2. Bake at 350 for 5 minutes. Pull out and immediately add in chocolate.
  3. Place in oven for 1-2 minutes, or until chocolate has begun to melt.
  4. Use a spoon to swirl chocolate in the cup.
  5. Place a marshmallow ontop. Broil until golden brown (30 seconds).
  6. Enjoy!
