Banana Bundt Cake with Peanut Butter Glaze

This easy banana bundt cake recipe is a cross between a sweet banana bread and a sweet banana cake! Topped with a peanut butter glaze, this cake is sure to be a hit!

Ingredients

Banana Bundt

  • 1/2 cup butter softened
  • 1/3 cup granulated sugar
  • 1 cup brown sugar
  • 3 eggs
  • 2 1/4 cup all-purpose flour
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup mashed bananas
  • 2 tsp vanilla extract

Peanut Butter Glaze

  • 2-3 Tbsp milk I used 2%, but whole works fine as well
  • 1/4 cup peanut butter
  • 1/2 tsp vanilla extract
  • 1 - 1 1/2 cups powdered sugar

Instructions

Bundt

  • Preheat the oven to 350 degrees and grease a bundt pan with baking spray.
  • In a large bowl, cream butter until light and fluffy, about 1 minute. Add in granulated sugar and brown sugar, and beat until well combined. Add in eggs, 1 at a time, beating well after each addition. Set aside.
  • In a separate bowl, sift together flour, baking soda, cinnamon and salt. Slowly incorporate the dry ingredients into the wet, mixing until just combined.
  • Add in mashed bananas, sour cream, and vanilla extract. Mix until combined.
  • Pour batter into the bundt pan and bake for 45-50 minutes, or until the cake is golden brown and cake tester comes out clean.

Glaze

  • With a mixer, beat peanut butter until light and fluffy, about 1 minute. Add in powdered sugar, beginning with 1 cup. Add in vanilla extract and and 2 Tbsp of milk, beating until well combined. If glaze is too thin, add in the last 1/2 cup of powdered sugar. If it's too thick, add in the last tablespoon of milk.
  • Pour glaze over the cake, allow to harden (about 5-10 minutes) and enjoy!
