Roasted Ratatouille Bowl (with Hillshire Farm Smoked Sausage & Uncle Ben’s Jasmine Rice)

This Roasted Ratatouille Bowl is made with fresh roasted vegetables, smoked sausage, and jasmine rice, making it a perfectly comforting and wholesome meal perfect for the fall!

Ingredients

  • 1 package Hillshire Farm Beef Smoked Sausage 1” thick rounds
  • 1 pouch Uncle Ben's Ready Rice Jasmine
  • 1 Large Eggplant large diced
  • 1 Yellow onion diced
  • 1 Red bell pepper large diced
  • 1 Zucchini sliced ½” thick rounds
  • 1 Yellow Squash sliced ½” thick rounds
  • 4 Garlic Cloves rough chopped
  • 1 can Tomatoes diced 16 oz.
  • 2 tbsp. Fresh Rosemary chopped
  • 2 tbsp. Fresh Oregano chopped
  • 1 jar Kalamata Olives pitted, 6 oz.
  • ½ cup Italian Vinaigrette
  • 2 tbsp. Basil fresh/chopped
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 450˚F.
  • Using a 9x13” baking pan add eggplant, zucchini, yellow squash, red bell pepper, onion, garlic, olives, tomatoes, rosemary, oregano and Hillshire Farm Beef Smoked Sausage together.
  • Drizzle with vinaigrette. Sprinkle with salt and pepper, to taste.
  • Toss together until evenly coated.
  • Cover baking dish with foil and bake for 20 minutes.
  • Remove foil and bake uncovered for 20 minutes, or until golden brown.
  • Follow heating instructions on Uncle Ben’s Ready Rice Jasmine and pour into a serving dish.
  • Place finished vegetables and Hillshire Farm Beef Smoked Sausage on top of rice, and garnish with fresh basil.
