Everyone? Exxx-cellent, because this lush tastes like all things pumpkin ‘n spice in pudding form. And if you are anything like me, pudding is the ultimate comfort food, because, hello, it’s tasty, it’s fun (it’s impossible to eat pudding without smiling–true story), and reminds me of fifth grade feelings when all of us girls commiserated over the boys commandeering the basketball court.

Every. Single. Lunch.

Between that and trying to learn all of the state capitals, fifth grade was hard and pudding was mandatory to get through it alive. #imasurvivor

Pudding is also mandatory for surviving adulthood. It’s a proven fact. 😉

Because Pumpkin Chocolate Chip Marshmallow Cookies, Pumpkin Pie Fluff Dip, Cream Cheese Glazed Pumpkin Bundt Cake, and all of the other desserts I’ve shared were clearly not enough for this glorious season.

What can I say, I’m addicted to fall and want to enjoy the season thoroughly! It always passes by a little too quickly. 🙂

Plus, with this easy, budget-friendly, no-bake dessert made with JELL-O Vanilla Instant Pudding, JELL-O Chocolate Instant Pudding, and BAKER’S Semi-Sweet Chocolate, I can share the spirit of fall with friends and family!

Ingredients
Chocolate Pudding Layer
  • 1 3.4oz box JELL-O Chocolate Instant Pudding
  • 1 14oz can sweetened condensed milk
  • 1 1/2 cups water
Pumpkin Spice Pudding Layer
  • 1 3.4oz box JELL-O Vanilla Instant Pudding
  • 1 14oz can sweetened condensed milk
  • 1 1/2 cups water
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground all spice
  • 1/8 tsp ground cloves
  • 1/8 tsp ground nutmeg
Whipped Cream
  • 3 cups heavy cream
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/3 cup powdered sugar
Graham Cracker Layer
  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
Topping
  • BAKER’S Semi-Sweet Chocolate shavings about 3 Tbsp
  • 1/2 tsp cinnamon
Instructions
  1. In a large bowl, whisk (by hand or with an electric mixer) JELL-O Chocolate Instant Pudding powder with sweetened condensed milk and water, about 2-3 minutes, or until the pudding begins to thicken. Allow to chill for at least 4 hours.
  2. For the pumpkin spice layer, in a separate bowl, whisk (by hand or with an electric mixer) JELL-O Vanilla Instant Pudding powder with sweetened condensed milk and water, about 2-3 minutes, or until the pudding begins to thicken. Add in cinnamon, all spice, cloves, and nutmeg. Allow to chill for at least 4 hours.
  3. Once the pudding has chilled, in a large bowl with an electric mixer, beat heavy cream until soft peaks begin to form, about 6-7 minutes (shorter or longer depending upon the speed of your mixer). Add in vanilla extract, cinnamon, and powdered sugar. Continue to beat until stiff peaks begin to form, about 1-2 minutes longer (makes about 6 cups of whipped cream).
  4. Gently fold 1 1/2 cups of whipped cream into the chocolate pudding mix, until the whipped cream is fully incorporated. Set aside.
  5. Gently fold 1 1/2 cups of whipped cream into the pumpkin spice pudding mix, until the whipped cream is fully incorporated. Set aside.
  6. Mix graham cracker crumbs with melted butter. Once combined, set aside 2 Tbsp of graham cracker crumbs for the topping (optional).
  7. With the remaining graham cracker crumbs, spread half of them over a 9x13" pan. Top with half of the chocolate pudding mix, then half of the pumpkin spice pudding mix, and half of the remaining whipped cream. Then, repeat the layers once more.
  8. Shave the chocolate with a vegetable peeler, and top the lush with chocolate shavings, cinnamon, and graham cracker crumbs.
  9. Refrigerate until serving.
  10. Enjoy!
Recipe Notes

Note: I doubled this recipe when shooting my pictures, as I was making it for family. Thus, in my pictures, you might notice my boxes of JELL-O pudding are the large size.

    This looks delicious. Could you use the instant pumpkin pudding instead of the vanilla pudding? Should make it even better.

      Hi Sandy, yes you could! I used vanilla because sometimes I can’t find the pumpkin pudding all year long at my stores. 😊
