I’m bringing you yet another ice cream recipe! And you know what? I don’t hate it.

Ice Cream gives me all the summer feels, and strawberry ice cream, in particular, reminds me of summer days spent at our family cabin in the mountains (their strawberry ice cream is superior to all other ice creams).

This homemade strawberry ice cream is about as good as it gets (unless you wanted to throw some Neapolitan Sheet Cake or Strawberries and Cream Cupcakes into the mix—cake is always a good idea). Plus, it’s totally the Molly Ringwald of the ice cream world since it’s so pretty in pink!

I mean, after that classic 80’s reference, how can you even resist this??

(Totally a rhetorical question.)

This gloriously pink homemade Strawberry Ice Cream Ice Cream is made with an ice cream maker, but it is so worth the investment! I have used mine countless times and absolutely love it!

In fact, next to my standing mixer, my ice cream maker is my used kitchen tool. Seriously, there is nothing like homemade ice cream. 😉

All right, so let’s talk about this recipe and just what makes it SO amazing.

Now, this Homemade Strawberry Ice Cream recipe calls for just a few simple ingredients:

-heavy whipping cream

-half and half

-strawberries

-honey

-sugar

-vanilla extract

-lemon juice

And, it is seriously so simple to whip up! Plus, even though is an eggless strawberry ice cream, the mix of ingredients make for such a creamy strawberry ice cream recipe!

Homemade Strawberry Ice Cream Tips & Tricks: 

  1. Breaking down this simple strawberry ice cream recipe a bit, the first thing to do is to hull and chop your strawberries into small pieces. For me, I really do like bigger pieces of strawberries in my ice cream, so I do a rough chop on the berries. Depending upon your taste preferences, you can make them as big or small as you want.
  2. In a large bowl, mix the strawberries with the sugar, honey, and lemon juice, and allow the mixture to sit about 15-20 minutes. The sugars and acid from the lemon juice will release the strawberry juices, making them softer.

3. Once they have set, with a potato masher, fork, or pastry cutter, mash the strawberry mixture until there are no longer any big pieces throughout.

**(Doing this by hand will give you nice strawberry pieces. If you prefer a smoother strawberry ice cream, use a blender or food processor to puree them. I prefer real strawberry pieces throughout, but it tastes great both ways!)**

The Best Strawberry Ice Cream Recipe Tips & Tricks (I might be biased…) 

4. Add heavy cream, half and half, and vanilla extract to the strawberry mixture. Pour into an ice cream maker and follow your manufacturer’s directions (mine took about 15-20 minutes).

5. Once churned, if you like it soft serve, go ahead and enjoy! But, if you prefer it a bit thicker, chill it for 3-4 hours in the freezer. Before serving, allow it to sit out 5-10 minutes or so to soften, making it easier to scoop.

Homemade Strawberry Ice Cream

This Homemade Strawberry Ice Cream is creamy, dreamy, and made with fresh strawberries. This homemade Strawberry Ice Cream recipe is incredibly easy, making it the perfect spring and summer dessert! 

Ingredients
 

  • 1 1/2 cups strawberries, hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Instructions
 

  • In a large bowl, mix strawberries, honey, sugar, and lemon juice. Allow to sit 15-20 minutes, or until the strawberries have released their juices.
  • Mash the mixture with a potato masher, fork, or pastry cutter until there are no longer any large strawberry pieces (if you prefer a smooth ice cream, use a blender or food processor instead*).
  • To the strawberries, mix heavy cream, half and half, and vanilla extract. Stir just until combined.
  • Pour the mixture into your ice cream maker, and follow your manufacturer's instructions (mine took about 15-20 minutes to churn). You can eat the ice cream soft-serve, or freeze it in an airtight container for 3-4 hours to thicken it up slightly. For best results, allow the ice cream to sit at room temperature for about 5-10 minutes to soften before serving.
  • Enjoy!

Notes

*If you puree the strawberries, I would suggest only using 2/3 - 1 cup of strawberries, as the liquid consistency can make the ice cream less creamy if you use the full 1 1/2 cups.
*The prep time refers to making the ice cream and does not include the chill time.

        I subbed out the strawberries for other fruits: Mango, blackberry and blueberry. It was truly delicious with each fruit. Peaches are next on my list, but waiting for my peach tree to finish growing it’s fruit!

    I have made this numerous times and love it! We were going to make it today for Father’s Day, but when I got my strawberries out of the fridge, they had all molded. I had mangos available, so subbed those in for the s’berries and also grated in fresh ginger with a Microplane grater. It was fabulous! So I think peach would be great as well, possibly with almond flavoring instead of vanilla and even crushed amaretto biscotti swirled in!

  5. Hi, just wondering, is it possible to make this recipe without an ice cream maker?

    1. Hi Alexa! I have never tried this particular recipe without an ice cream maker so while I don’t know for certain, I don’t think this would work without an ice cream maker. I just don’t think it would thicken right and might be super crystalized.

      1. One way to make ice cream without an ice cream maker is to put it in the freezer and then, as it is freezing, keep pulling it out and use a hand electric mixer to “churn” it. That way you break up the ice crystals and whip a little air into it.

      I don’t have an ice cream maker , I used my blender and with my fruits frozen it came out thick and creamy . I placed it in a ice cream container and I have to admit it came out pretty good

    Thank you for sharing this lovely recipe! Was looking for something fast and easy, didn’t expect the texture to be so perfect as well! Just tossed everything in the blender (used frozen strawberries) and then the ice cream machine and this was ready scoop within an hour 😀

    Wow- delicious! I doubled the recipe and used a combo of milk and heavy cream (used approx a 4:1 ratio of heavy cream to 2% milk because it’s what I had) and my family devoured it! This was only my second time using my ice cream maker (I have a cuisinart) and the consistency was incredible. It took about 27 minutes having doubled the recipe to fully set (to be ready for the freezer), and the last bits that we scraped from the ice cream maker bowl with a rubber spatula were perfect for a quick sample serving.

    No one in my family ever wants the same kind of ice cream, but this recipe had everyone raving about how it’s some of the best ice cream they’ve ever had. Definitely a keeper!

  15. Twas very rich and creamy. Love the amount of color from the strawberries alone, but mine tasted like Honey-Strawberry ice cream. Now, I love the taste of honey, but that’s not exactly what I’d planned for here.

    I made this twice. First I made it with blueberries which was really good!! For me it was just a touch too much heavy cream. I made it a second time with the strawberries and just rough chopped them and made the ice cream with equal parts heavy cream and 10% (my store was out of half&half). I also cut down a 1/4 cup sugar because I like it less sweet. I will definitely use this recipe again and again !

    1. Hi Aleisha, half & half is the name of an ingredient in the dairy section that is a mixture of heavy cream and whole milk. If you can’t find it, you can make it yourself by using half heavy cream and half whole milk. 🙂

    Well I was slightly impulsive and jumped to making this with my two year old. Realized as we went we didn’t have honey… oops! Subbed with maple syrup.

    Then… I realized we didn’t have heavy whipping cream or half and half. My audience is a 2 year old, so I just used whole milk. It’s churning now and took a little taste- it’s delish! Can’t wait to make it properly!! Thank you for this easy recipe! My daughter was super excited to help too ❤️

    Just made this tonight with home grown strawberries and it was great! I did not cut up the berries, just mashed the strawberries with a potato masher and mashed them really well. I added 1/4 teaspoon of guar gum just in case it turned out too juicy. (Mix the guar gum with a little granulated sugar, then sprinkle in and mix well just before churning, it helps with the texture.) It was delicious and I loved that I did not have to cook it with eggs the night before. Very nice recipe, simple and delicious. Thank you!

    P.S. It *is* a small batch. Not sure if doubling it would fit into my churn but increasing by 50% would certainly work. On the other hand, it froze more quickly than most batches of ice cream.

    I thought this ice cream was just fabulous. I added sliced almonds and cherry kirch at the very end and sooooooo divine!!! Even before I added the extras, I wouldn’t compare it to a custard in terms of creaminess (just being honest) but you really don’t need that with such a rich tasting Philadelphia.

    Outstandingly. I have found many ice cream recipes are too sweet. This one is not. It’s perfect. The only downside is that you will need to make two batches because the first batch is going to disappear very quickly!

    1. Hi Linda, I use a Cuisinart maker that I’ve had for about 10 years. While I haven’t worked extensively with other ice cream makers, as far as I know, the recipe should work with any ice cream maker. 🙂

    Let me just say this Recipe So Good! I have two kids that have allergies. I needed a vegan free nut free recipe obviously this one isn’t but I accidentally came across looking for recipes. Thought well if I add vegan half and vegan heavy whipping cream how will it come out or taste. I didn’t think of looking in the comments either. Let’s just say my son who can have whatever he wants and knows what regular ice cream taste like! “He says it taste better then his ice cream.” He Didn’t know it was vegan till my daughter asked him kindly not to eat her and my other sons ice cream. he can have any ice cream he wants but they can’t lol! It’s a hit in our house!

    The ice cream was amazing! I ran into a bit of trouble trying to double the recipe. Three cups went too quickly!
    My question is this…how many cups of ice cream mixture do you have after adding ingredients? That would help knowing the quantity I need when I scale it up.

  45. A great recipe! Very rich and creamy. I was happy to have a recipe that didn’t require me to heat the milk beforehand to prepare a custard, like when using egg or starch. Just an FYI for those that might be in the same situation as me, I didn’t have enough cream to make my own “half and half”, so I used 1 cup heavy cream and 1/2 cup whole milk, and it still turned out great.

    Excellent recipe, I changed it up a bit, didn’t add the honey and used strawberries, blueberries & raspberries, added a bit of cheesecake instant pudding(not the whole box) and some graham cracker crust as I wanted a berry cheesecake ice cream. It was so delicious! I’ll definitely use the recipe again and change up the fruits.

    I knew right away this recipe would be good, but it’s a knockout. I don’t have a huge sweet tooth, but I did double the amount of sugar and honey, and I used 600 ml double cream. Mamma Mia! This strawberry ice cream is a knockout. I’m going to make a peach version, following the same method.
