These pecan pie pancakes are filled with all the flavors of fall and topped with a homemade apple cinnamon syrup! And the secret to the lightest, fluffiest pancakes ever?! Canada Dry Sparkling Seltzer Water.
During my senior year of college, one of my good friends and I had a pact that on Mondays, Wednesdays, and Fridays we would meet at the gym really early and start the day with a great workout!
While we were supposed to hold each other accountable to cardio, we had way more success at convincing each other that splitting breakfast at the cafe down the street was a better way to spend the morning.
For the record, it totally was the better choice. ?
And when it comes to this time of year, there is nothing more comforting than a big ‘ol stack of warm pancakes. Needless to say, this is the fall breakfast you’ve been waiting for. 😉
To be honest, this type of breakfast really only happens on special occasions, like vacations, celebrations, and holidays, apart from that one year in college. I absolutely love breakfast, but I’m fairly predictable in the mornings and tend to grab something quick and easy, like cereal, oatmeal, or a smoothie.
After having a stack of these bad boys, though, I’m not sure I can ever go back to anything but these. Light, fluffy pancakes (thanks to the secret ingredient of Canada Dry Sparkling Seltzer Water, which you can find at your local Ralph’s!) filled with all the sweet flavors of pecan pie and topped with an apple cinnamon syrup that actually might be the best thing I’ve ever eaten?
I can’t even. There’s just so much fall going on this breakfast that I don’t know what to do with myself. Just don’t know what to do-o-o-o-o with myself…
It’s just too good.
Let’s break this fall stack of heaven down a bit:
Why use Canada Dry Sparkling Seltzer Water? Well, the reason behind the seltzer water is because the carbonation adds air to the batter, which yields light, fluffy pancakes. Plus, it’s all natural, unsweetened, and has no calories or sodium.
That’s a huge win in my book!
I used the Lemon Lime flavor because I happen to like the brightness the citrus adds to the pancakes; however, the Original flavor would work perfectly as well!
Trust me, making the syrup is not optional.
- 2 2/3 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup brown sugar
- 1/2 tsp all spice
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 tsp cinnamon
- 3/4 cup pecans finely chopped
- 1/4 cup vegetable oil
- 2 eggs
- 1 1/4 cups buttermilk
- 3/4 cup Canada Dry Sparkling Seltzer Water Lemon Lime or Original
- 1 1/2 tsp vanilla extract
- 1/2 tsp butter extract
- 1 cup water
- 1 cup apple juice
- 1 cup brown sugar
- 2 Tbsp corn starch
- 1/4 cup butter
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp cloves
- 1 cup apples chopped (I used bigger slices, but you can chop them finely as well)
- 2 tsp vanilla extract
- Extra Pecans
- Powdered Sugar
- Mix apple juice, water, and corn starch together, making a slurry. Set aside.
- In a medium saucepan over med-low heat, melt butter and brown sugar together. Once melted, add in the water mixture and whisk until combined.
- Add in apples, vanilla extract, cinnamon, salt, and cloves. Bring to a boil, then turn down to med-low heat, allowing the apples to cook down, about 6-7 minutes or until the syrup has begun to thicken (it will continue to thicken after being taken off the heat).
- Once the apples are tender and it has thickened, take off of the heat. Set aside.
- Preheat your griddle over med-low heat, making sure to grease it with melted butter or cooking spray.
- In a large bowl, sift together all dry ingredients. Set aside.
- In another bowl, whisk together buttermilk, Canada Dry Sparkling Seltzer Water, vanilla extract, butter extract, and eggs. Gently incorporate the wet ingredients into the dry.
- Using about a 1/4 cup of batter for each pancake, drop the batter onto a hot griddle.
- Cook until bubbles begin to form and pop on each pancake and the edges look dry, about 1-2 minutes. Flip the pancakes over and cook for about 1-2 more minutes, or until the pancakes are golden brown.
- Drench with syrup, top with pecans, and enjoy!
