Guys, I can’t believe we’ve actually entered the month of December. We’re less than 25 days away from Christmas, which means there are only a few more shopping weeks left before the big day. And, that there are a million movies to watch, Christmas lights to see, parties to attend (and prepare for), Christmas goodies to bake, and plenty of Christmas-spiced lattes to drink.
I’m winded just thinking about that list.
But, even though the holidays can be chaotic and filled to the brim with events, it is still the most wonderful time of the year. It’s magical and beautiful, and I adore this time of year and all it represents.
However, it is still a crazy busy time of year. In order to pack everything in I want/need to do before the 25th arrives (always far too quickly for my liking), the day must begin with coffee. On the days when I’m driving far, or when I just need to get an early start to my busy day, homemade lattes in a to-go cup are the only way to go.
Dixie® To Go cups are so convenient, and the perfect way to crush it all day long (I mean, they are the Official Cup for Crushing It…). Seriously though, when I’ve got a checklist that could rival Santa’s list, all I need are my Christmas tunes and my latte to go to keep me both sane and in the holiday spirit!
Well, all I need are Christmas tunes and a hot latte to keep me sane and ready for Christmas. There’s nothing worse than drinking a lukewarm coffee drink when it was meant to be hot, right?? That’s part of the reason why I love Dixie® To Go cups, because the cups are insulated and the lids are leak proof (because despite being a full-fledged adult, I manage to spill on myself at least once a day–cue all the eye-rolling emojis).
Once I’ve finished my latte, and crossed off half of my checklist, I can simply toss it in the trash and continue forward jazzed for the day. No mess = no stress, giving me more time to celebrate the season.
One of my favorite ways to enjoy the season is with seasonally appropriate flavors! Since drinking a peppermint mocha latte any other time of the year seems wrong, I try to pack in as many peppermint drinks as possible during winter!
Making them at home is super simple, especially since I can just make it in my Dixie® To Go Cup and head out the door. Crushing it by making coffeeshop-style drinks at home so I can continue to crush it all day long = Winning at life.
To make lattes super simple, I love using flavored creamers. Making your own creamer is a simple process, and you can control what ingredients you are using, how sweet you want it, etc. This peppermint mocha creamer has only five ingredients: half & half, cocoa powder, brown sugar, peppermint extract, and espresso powder.
Creamer + Espresso (or strong coffee) + frothed milk = latte goodness.
Who’s ready to crush it with me this holiday season??
- 1 cup half & half
- 2-3 Tbsp brown sugar (2 Tbsp if you like it less sweet; 3 Tbsp if you prefer a sweeter creamer)
- 2 Tbsp cocoa powder
- 1/2 tsp instant espresso powder
- 1/4 tsp peppermint extract (peppermint extract is really strong, and a little goes a long way. If 1/4 tsp is not minty enough, feel free to add more)
- In a medium saucepan, whisk half & half over med-low heat, until it begins to simmer.
- Add in brown sugar (I used 2 Tbsp, but if you prefer sweeter creamer, use 3 Tbsp), and whisk until combined with half & half.
- Add in cocoa powder and espresso powder, and whisk until completely dissolved.
- Lastly, add in peppermint extract. Turn off the heat and allow to creamer to cool down.
- Store in an airtight container, such as a glass jar with a lid.
*The creamer lasts about 7-10 days when covered and refrigerated.
