These easy peach popsicles are made with Greek yogurt and honey, making them a healthy way to stay cool in the heat! | www.alattefood.comDo you ever have moments where you desperately want something because it’s pretty, but you have absolutely no idea what you would ever use it for?

Case and point, colored tape, also known as washi tape.

Every time I’m in Target, I have to browse the decorative, organization section, which is actually fairly hilarious considering that my organization strategy is more or less chaotic. I buy organizational tools like day planners and binders, use them for a day, and then revert back to my I’m-sure-I’ll-remember-it-in-my-head strategy.

Nonetheless, I want the cute day planners, and dividers (even though I have nothing to divide), and the magazine racks (but I’m a magazine junkie so I’d need like 12 and counting). And that tape. That adorable, colored tape I would have absolutely no use for except to stare at while it sits on my desk for 6 months until it gets shoved in the dedicated crafting drawer, where the rest of my pretty crafting purchases lay to die.

These easy peach popsicles are made with Greek yogurt and honey, making them a healthy way to stay cool in the heat! | www.alattefood.comI stayed strong, but when purchasing these popsicles sticks for these peach pops, I almost caved and bought the tape (because it was pink and gold chevron and I’m such a girl it’s not even funny) to decorate the popsicle sticks.

The sticks that will get thrown away after the popsicle is gone.

Who would’ve guessed colored tape could be so tempting? And that I could write a whole post dedicated to it? The creators are brilliant.

I definitely ate this for breakfast.

But, it’s fine, because unlike the days where chocolate makes an appearance, this is actually a well-balanced meal, because it’s packed with Greek yogurt and only honey and vanilla extract for sweetness (besides the glorious peaches).

Woot woot! Let’s pretend we’re clinking mason jars decorated with washi tape together in honor of this popsicle.

These easy peach popsicles are made with Greek yogurt and honey, making them a healthy way to stay cool in the heat!
Servings: 6 -7 Popsicles
Ingredients
  • 1 1/4 cups Vanilla Greek yogurt
  • 1 1/2 cups diced peaches fresh or frozen (if using frozen, allow to thaw first; if using fresh, remove the peel)
  • 1-2 Tbsp honey or sugar if you'd prefer these sweeter
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon zest
  • 2 tsp lemon juice
Instructions
  1. In a food processor, blend peaches, honey, vanilla extract, lemon zest, and lemon juice together.
  2. In a large bowl, fold the peach mixture with the Greek yogurt. (If you want a swirled look, do not fully incorporate the peach mixture with the Greek yogurt.)
  3. Pour into popsicle molds (or paper cups if you do not have a popsicle mold). If your molds comes with sticks, you can put them in immediately and freeze for 4-6 hours. If you need to use wooden sticks, allow the pops to freeze for an hour before putting them in, and freeze for an additional 4-5 hours.
  4. Run molds under warm water to easily remove.
  5. Enjoy!

    haha..I do the same thing! I have the best of intentions with the day planners but then revert back to my phone will save me and I “note” it up! Not sure what I would do if I lost my phone. Bad things…very bad things!

    But these popsicles are all good, I would take solace in these for sure!

    I wish I would’ve had some of these today! We spent much of the afternoon outside in the yard and it was so hot! These would have been perfect to cool down with. 🙂
